Where the name comes from
Melbourne
There's a moment, somewhere between the last ticket and the first beer, when the kitchen finally exhales.
The burners go quiet. The chefs disappear into the night.
And the pit is still going.
Thirty covers turned into three hundred pieces of crockery and pans burnt black from ambition.
No headline. No post. No mention on the menu. But pull him out for one night and watch the whole thing fall over.
Service doesn't slow down. It dies.
Kitchens aren't held together by the loudest voice or the sharpest knife. They're held together by the people willing to stand in the worst spot in the room, doing the job nobody else wants. That's who this is named after.

Five courses of elevated Vietnamese, plated the way we'd want to eat on our night off. We're not printing it early. Tell us your dietaries when you book and we'll work around them.
Who we are
Four of us
We're four people who have spent the last several years working in hospitality — two of us as chefs, two front of house. We're all brought together by a passion for this industry.
Our goal with Dishpigs is to show our appreciation for the industry we've grown up on, and keep the core of what restaurants really are: people who are truly passionate about something, making something great.
